Records shall be signed or initialed by the container closure inspector and reviewed by management with sufficient frequency to ensure that the containers are hermetically sealed. (d) Records shall be maintained to identify the initial distribution of the finished product to facilitate, when necessary, the segregation of specific food lots that may have become contaminated or otherwise rendered unfit for their intended use. (e) Copies of all records provided for in this part, except those required under § 113.83 establishing scheduled processes, shall be retained at the processing plant for a period of not less than 1 year from the date of manufacture, and at the processing plant or other reasonably accessible location for an additional 2 years. If, during the first year of the 3-year record-retention period, the processing plant is closed for a prolonged period between seasonal packs, the records may be transferred to some other reasonably accessible location at the end of the seasonal pack.

Thermal Principles and Kinetics

Thermal processing of food materials is one of the most widely used methods of food preservation. Foods may be thermally processed using numerous heating systems such as retorts (batch or continuous), direct heating systems (steam injection or steam infusion), indirect heating systems (tubular heat exchangers, shell and tube heat exchangers, plate heat exchangers, scraped surface heat exchanger...

An in vitro method for estimating biologically available vitamin B6 in processed foods.

1. An in vitro method which used enzymic digestion of the food matrix to release biologically available vitamin B6 is described. 2. Vitamin B6-fortified liquid model foods were thermally processed. After these foods had been freeze-dried, one part was subjected to enzymic hydrolysis at pH 2.0 with pepsin (EC 3.4.23.1) followed by a hydrolysis at pH 8.0 with pancreatin. The vitamins that were fo...

Determination of 5-Log Reduction Times for Food Pathogens in Acidified Cucumbers during Storage at 10 and 25 C†‡

Outbreaks of acid-resistant foodborne pathogens in acid foods with pH values below 4.0, including apple cider and orange juice, have raised concerns about the safety of acidified vegetable products. For acidified vegetable products with pH values between 3.3 and 4.6, previous research has demonstrated that thermal treatments are needed to achieve a 5-log reduction in the numbers of Escherichia ...
